Fancy a quick and simple meal, this is one of our favourites it’s gluten free and vegan so why wouldn’t you love it?

To make the Tomato and Spinach Gnocchi which will feed 4 people you will need:

  •  Oil (we used coconut)
  • 1 Large onion
  • 1 tub of button mushrooms
  • 2 tins of organic chopped tomatoes
  • spinach gnocchi (we cheated…we didn’t make the gnocchi)
  • Your favourite vegan cheese (We used Sheese smoked cheddar style)

Start by adding your oil to a frying pan on a low heat, now chop the onion and mushrooms.

Add the chopped onion to the pan and fry until golden, now add the mushrooms and the organic tinned chopped tomatoes and leave to simmer for 15 minutes or until the sauce becomes nice and thick, while that is cooking boil some water in a saucepan and add the spinach gnocchi, cook for a few minutes then drain. Now add the gnocchi to the sauce and mix until it is fully covered. Plate up and sprinkle with your chosen vegan cheese.
